A year ago I had a large pot on the patio filled with flowering kale and other cool season annuals. With the summer heat the kale flowered and went to seed. The pot was shuffled to the side yard. After the rains this winter I noticed a bumper crop of kale in the pot. With regular watering the seedlings developed into beautiful plants.
I have been harvesting the kale and incorporating it into a fresh pasta sauce that is quick and so much tastier than the prepared stuff. Vary the ingredients proportions according to the number of people to be fed.
Stir fry garlic cloves in olive oil Add chopped fresh or canned tomatoes Add oregano, basil, rosemary and a pinch of red pepper flakes Add salt and pepper to taste
Simmer for 5 minutes
Add kale and stir to mix Turn down heat and put on lid Cook approximately 5 minutes til kale is tender Just before serving stir in 1/2 cup of red wine
Serve over tortellini, raviolis or pasta form with lots of grooves to collect the sauce
Top with parmesan curls made with your vegetable peeler
Don't forget to drink the rest of the wine.
